Quickly thaw, saute and dress with fresh herbs. Goes well with noodles or steamed rice. This is a quick and delicious shrimp recipe. You can use almost any combination of chopped fresh herbs here. Yield is 4 servings.

ingredients

Tbsp olive oil

clove garlic, minced
1 ½
lb(s) large shrimp, peeled and deveined, tails left on
Coarse salt and freshly cracked black pepper

Tbsp chopped fresh parsley
1
Tbsp chopped fresh lemon thyme, or thyme
1
Tbsp chopped fresh coriander
Juice of half a lemon

Step 1

Heat the olive oil in a large saute pan on high heat and add the garlic.

Step 2

Saute for 1 minute.

Step 3

Season the shrimp with salt and pepper and add them to the pan.

Step 4

Cook, tossing shrimp in the pan for about 2 to 3 minutes or until opaque and almost cooked through.

Step 5

Add the lemon juice and chopped fresh herbs.

Step 6

Toss to heat, about 1 to 2 minutes.

Step 7

Transfer the shrimp to a platter.
