German Kriek beer (cherry beer) works best in this recipe. However, if you can’t find it, any good quality beer will do. When flambéing at home, it is always wise to keep the lid to your pan nearby to put out the flames if necessary. Everyone looks better with eyebrows! Yield is 4 servings.

Drain the cherries over a small saucepan.
Reserve half of the cherries and save the rest for another use.
Add the dried cherries, lemon juice, sugar and vanilla bean scrapings to the pan.
Heat to a simmer on medium heat and reduce by half or for about 10 minutes, stirring occasionally.
Add the reserved cherries back to the pan.
Heat for 1 minute.
Add the beer and the Calvados to the pan and ignite with a match.
The alcohol should burn off in a few seconds and the flame will extinguish. If not, cover pan with lid.
Spoon the sauce over ice cream.
