Lamb’s lettuce is also known as mâche, corn salad or field salad. It has dark green, small, tender leaves that are slightly nutty in flavour. Baby spinach also works nicely in this salad. Citrus is always refreshing in salad, depending on the season, you can use blood oranges or grapefruit.

cup hazelnuts, toasted and skinned (125 ml)

cup lamb’s lettuce, cleaned (1 litre)

blood oranges or grapefruits, segmented
Dressing
⅓
cup champagne vinegar (75 ml)

Tbsp hazelnut oil (30 ml)
⅓
cup olive oil (75 ml)
coarse salt and freshly cracked black pepper, to taste

Directions
Step 1
Combine the hazelnuts, lamb’s lettuce and blood oranges in a medium bowl. Toss with vinaigrette. Serve immediately.
Step 2
To make the vinaigrette, whisk together the champagne vinegar, hazelnut oil, olive oil, salt and pepper in a small bowl until combined.
