slices side bacon, chopped
2
cup (500 mL) diced cooked potatoes
1
small onion, finely chopped
1
clove garlic, minced
1
Tbsp (15 mL) flour
½
tsp (2 mL) salt
6
eggs
¾
cup (175 mL) milk
1
pkg (200 g) Black Diamond Medium Cheddar or Marble Cheese, shredded, divided

Step 1
Cook bacon in large non-stick frypan until crisp.
Step 2
Drain, reserving 2 Tbsp (30 mL) drippings; set bacon aside.
Step 3
Cook and stir potatoes, onion and garlic in reserved drippings over medium heat until onion is tender and potatoes are browned. Sprinkle with salt.
Step 4
Beat together eggs and milk in medium bowl; stir in half the cheese.
Step 5
Pour egg mixture over vegetables in frypan.
Step 6
Cover and cook over low heat 15 min or until eggs are almost set.
Step 7
Sprinkle with remaining cheese and reserved bacon.
