Bocconcini Skewers

tub mini bocconcini, drained
1
pt grape tomatoes
Fresh basil leaves
Balsamic glaze
Salt and pepper
Fresh Garden Salad

romaine hearts, chopped
3
tomatoes, cut into wedges
1
English cucumber, sliced
1
small onion, sliced

Tbsp extra virgin olive oil
2
Tbsp seasoned rice vinegar
Salt and pepper
½
cup each chopped fresh parsley and basil (optional)

Step 1
Skewer bocconcini, tomatoes, and basil leaves onto skewers and drizzle with balsamic glaze. Season with salt and pepper; set aside.
Step 2
In a large bowl, combine romaine, tomatoes, cucumber, and onion.
Step 3
In a small bowl whisk together oil, vinegar, and salt and pepper to taste. Drizzle over salad and add parsley and basil, if using. Toss well to combine.
Step 4
Top with skewers to serve.
