Fresh Mint Iced Coffee

A sweet coffee treat made with muddled mint.
4 mint leaves
1 cup freshly brewed strong coffee
1 Tbsp heavy cream
1 Tbsp Simple Syrup, recipe followsSimple Syrup
1 cup sugar
1 cup water
1. Muddle the mint leaves in a large glass. Fill it with ice. Pour in the coffee, heavy cream and Simple Syrup, and give it a little swirl. Enjoy!Simple Syrup
1. In a small saucepan, whisk together the sugar and water and bring to boil, stirring often. Remove from the heat and let it cool. Transfer to a container and store in the fridge for up to 2 weeks.
