Frozen Shaved Peaches and Cream With Lavender

Another day, another trending recipe straight from TikTok. Lately, it seems like everyone is shaving their fruit and serving it as a cool summer treat, so naturally I had to give it a try. I was especially inspired by creator Carolina Gelen’s take: shaved frozen peaches and cream. The idea is to freeze a couple peaches in the freezer and shave them over whipped cream.

One of my favourite things to do with desserts is to add a floral note. Desserts like lilac tiramisu, Indian rice pudding with rosewater and elderflower cake are delicious floral treats perfect for summer soirees. My rendition focuses on highlighting the delicate aromatics of lavender with the fresh flavours of flat peaches, and I added a touch of blue spirulina for colour, too. While vacationing in France, I noticed that nearly every frozen treat features lavender in some capacity. Needless to say, lavender complimented this dessert perfectly and is the ideal treat for hot summer days. Read on to learn more about how to make shaved frozen peaches and cream with lavender.

Shaved Frozen Peaches and Cream

cup heavy cream
cup confectioners sugar
tsp blue spirulina powder, optional
tsp vanilla extract
frozen peaches

To serve

tsp lavender buds
Tbsp maple syrup



Freeze peaches for up to 4 hours or overnight

Step 1

In a medium-sized bowl, whip together heavy cream, sugar, blue spirulina powder (if using) and vanilla extract until light and fluffy. Scoop a dollop of whipped cream into a small serving bowl.

Step 2

With a microplane, shave frozen peaches over whipped cream.

Step 3

Sprinkle lavender buds over frozen peaches and cream. Drizzle maple syrup overtop shaved peaches. Serve immediately.
