Sweet mascarpone icing adds a delicious twist to this classic holiday fruit cake.
Preheat oven to 350 °F (180 °C).
In large bowl, mix flour, fruits, nuts, baking powder and salt. Mix well and set aside.
Pour mixture into 2 8 x 4-inch (20 x 10 cm) buttered loaf pans. Bake for 50 to 60 minutes or until toothpick inserted in centre comes out clean. Remove from oven and let stand for 15 minutes. Remove from pan and place cakes on serving platters.
In bowl, mix all ingredients. Mix well and refrigerate.
Spread Mascarpone icing on the fruit cakes.
