Sweet mascarpone icing adds a delicious twist to this classic holiday fruit cake.

Fruit Cake

cup (550 mL) all-purpose flour

cup (250 mL) mixed candied fruits
cup (150 mL) chopped walnuts and hazelnuts

tsp (10 mL) baking powder
pinch Pinch of salt

cup (250 mL) softened butter

cup (375 mL) sugar

pkg (8 oz /250 g) soft Canadian Cream cheese

eggs, beaten
¼
cup (50 mL) milk

tsp (10 mL) vanilla extract

Mascarpone Icing

oz (330 g) Canadian Mascarpone cheese

Tbsp (30 mL) icing sugar

Tbsp (45 mL) orange liquor
½
cup (125 mL) hazelnut spread (Nutella style)

Step 1

Preheat oven to 350 °F (180 °C).

Step 2

In large bowl, mix flour, fruits, nuts, baking powder and salt. Mix well and set aside.

Step 3

Pour mixture into 2 8 x 4-inch (20 x 10 cm) buttered loaf pans. Bake for 50 to 60 minutes or until toothpick inserted in centre comes out clean. Remove from oven and let stand for 15 minutes. Remove from pan and place cakes on serving platters.

Step 4

In bowl, mix all ingredients. Mix well and refrigerate.

Step 5

Spread Mascarpone icing on the fruit cakes.
