A great blend of cheese, fresh herbs and tortilla chips are all that you need for these delicious nachos.

ingredients

cup good quality tortilla chips (or a medium sized bag)
1
Tbsp olive oil

plum tomato, peeled, and, diced
6
large basil, leaves, chopped
2
cloves garlic, finely, minced
1
tsp olive oil
1
small can Romano beans, drained, and, rinsed
1 ½
grated fontina cheese
2
green onion, chopped

Step 1
Preheat oven to 375°F (190°C).
Step 2
Arrange 2 cups (500 mL) (or half of bag) of tortillas in a large shallow baking dish
Step 3
Combine the olive oil, tomatoes, basil and garlic.
Step 4
Meanwhile, heat olive oil and sauté the sausage meat until browned and cooked through, about 3-5 minutes. Add the beans and just heat through.
Step 5
Sprinkle half the sausage mixture over tortillas, cover with half the tomato mixture and half the cheese.
Step 6
Cover evenly with remaining nachos and tomato mixture.
Step 7
Sprinkle remaining cheese evenly over top. Sprinkle with green onions.
Step 8
Bake the nachos for about 5-7 minutes or until cheese is melted and bubbly.
Step 9
Serve immediately.
