Goose meat (flesh only, without bones)
Goose gizzard and heart
Lard, cut into cubes
Small onions, cut in half
Carrots, diced
Pumpkin, diced
Red wine
Elderberry
Thyme
Savory
Parsley
Pepper

Step 1
Brown the cubes of lard in a pan. Then brown the goose meat in the lard. Salt and set aside.
Step 2
Lightly brown the onions. Salt and set aside.
Step 3
Deglaze the pot with the red wine. Add elderberry. Set aside.
Step 4
Place in the bottom of jar: lard, cooked goose meat, heart, raw gizzard, and onions.
Step 5
Place diced carrots and pumpkin on top.
Step 6
Add thyme and savory.
Step 7
Pour in the red wine, the wine used to deglaze the pan, and the elderberry.
Add pepper.
Step 8
Close the jar tightly. Place in a cauldron full of water.
Bring to boil and cook for one hour.
