slices bacon, cooked and crumbled

oz Gorgonzola or Cambozola cheese, cut into 2-inch-wide (5 cm) slices

egg

Tbsp (45 mL) Dijon or grainy mustard

onion, coarsely grated

cup (150 mL) dry bread crumbs

tsp (2 mL) each salt and pepper

lb(s) (1 kg) lean ground chicken or turkey

burger buns, split and toasted
lettuce leaves, for garnish
tomato slices, for garnish

Step 1
Press bacon into each slice of cheese to adhere.
Step 2
In large bowl, beat egg with mustard. Stir in onion, bread crumbs, salt and pepper. With wet hands, shape into twelve ½-inch-thick patties. Place 1 piece cheese and bacon mixture on each of six; top with another patty, pressing around edges to seal and make six; 1-inch (2.5 cm) thick patties.
Step 3
Place on preheated greased grill over medium heat; close lid and grill, turning once, until meat is no longer pink inside and cheese is melted, 12 to 14 minutes. Top with lettuce and tomato between buns.
