Grated Carrot Salad with Greek Pineapple Yogurt

Looking for something exotic? Why not use Greek pineapple yogurt in a carrot salad? Much tastier and obviously much lower in fat than mayonnaise, this little fruity addition will put some sunshine into this classic recipe and into your day.

ingredients

carrots, peeled

green apple

walnuts, coarsely chopped

Tbsp (30 mL) raisins

single-serving 100 g container Oikos 2% Greek pineapple yogurt, stirred
salt, to taste

Step 1

Grate the carrots (I use a zester to obtain very long, thin pieces).

Step 2

Cut apple into thin strips (with peel).

Step 3

In a medium bowl, mix together the carrots, apple strips, chopped walnuts and raisins. Salt to taste.

Step 4

Serve the salad topped with 1 tablespoon (15 ml) of Greek pineapple yogurt (topping the salad with the yogurt is much more attractive than mixing it all together).
