Tbsp fresh lemon juice
tsp fresh oregano minced
Splash of red wine vinegar
cup olive oil
Salt and pepper
ripe tomatoes cut in wedges or multi coloured baby tomatoes cut in half
cucumber cut into ¼ inch slices
cup kalamata olives
cup mixed bell peppers chopped (yellow and red)
red onion thinly sliced
cup fresh basil leaves roughly chopped
cup feta cheese
pita bread, cut in half
In a jar, shake salad dressing ingredients until evenly
Place all vegetables in a bowl and toss with dressing.
Crumble feta cheese onto salad.
Stuff salad into pita pockets and serve immediately.
