cup ½-inch (1 cm) chunks English cucumber

cup cherry tomatoes, halved
½
red onion, thinly sliced
½
cup pitted Krinos Kalamata olives
1
cup crumbled Krinos Feta Cheese

Tbsp chopped, flat leaf parsley
1
tsp Krinos oregano
¼
cup Krinos olive oil

Tbsp lemon juice
salt and fresh ground pepper, to taste

cup mixed greens or frisée (optional)

Step 1
In a large bowl, gently combine cucumber, tomatoes, onion, olives, Krinos Feta Cheese, parsley and oregano. Drizzle salad mixture with olive oil and lemon juice; salt and pepper to taste.
Step 2
Place one cup (250 mL) lettuce in the center of each plate (if using) and top with village salad mixture.
