Grilled New York Steaks with Beer and Coffee Marinade

Sinky our teeth into juicy steaks, marinated overnight in a dark beer, Worcestershire and Tabasco sauce marinade and seasoned with a great spice mix.

oz dark beer, such as Guinness
¼
cup Worcestershire sauce

Tbsp Tabasco sauce
4
boneless strip steaks
3
Tbsp finely ground espresso or dark roast coffee

Tbsp pure chile powder (such as ancho)

tsp ground cumin
1
tsp sugar
½
tsp cayenne, or more to taste

tsp salt
½
tsp ground black pepper

Step 1

Mix the beer, Worcestershire, and Tabasco together and pour over the steaks and chill in refrigerator overnight, or for at least 4 hours.

Step 2

Mix the remaining ingredients in small bowl. Remove steaks from marinade and discard marinade. Pat steaks dry with paper towels, then scatter spice mix over steaks, patting it in with your fingers. Place in the fridge for 20 minutes.

Step 3

Heat grill to high and brush with oil, then grill steaks until for about 6 minutes per side for medium-rare. Remove from heat and allow to rest for at least 4 minutes. Serve.
