Grilled Ontario Peaches with Burrata and Mint

Grilling this fuzzy stone fruit brings out its sweetness even more, making this dish the ultimate dessert, appetizer or even side dish. Every bite offers an array of fresh flavours: herbaceous mint, earthy pistachios, creamy burrata, acidic balsamic and of course the sweetness of the peaches and honey. This dish has a wow factor that will impress a crowd, but is also wonderfully easy enough to make on any weeknight.

Ontario peaches, sliced into wedges

Tbsp extra virgin olive oil, plus more for brushing on grill

g burrata

pinch sea salt

pinch pepper

Tbsp balsamic vinegar
1-2
tsp honey, depending on desired sweetness

cup chopped and toasted pistachios
Handful fresh mint, torn by hand

Step 1

Heat a grill pan or BBQ to medium-high.

Step 2

Brush the peaches with a little olive oil, place them on the grill pan or BBQ for 4-5 minutes, then flip and grill for an additional minute until caramelized with grill marks.

Rip the burrata into pieces with your hands to give a rustic look, then arrange the grilled peaches around the burrata. Season with sea salt and pepper.

Step 4

Drizzle extra virgin olive oil over the fruit and cheese. Then, drizzle a splash of balsamic vinegar on top. Lastly, spoon honey over everything.

Step 5

Garnish with chopped pistachios and fresh mint leaves.
