Begin by making guacamole. Mash avocado in a bowl. Add tomatoes, red onion, garlic, chives, cilantro and the juice of 1/2 a lime. Mix until well combined. Season with salt and pepper to your preference.
To assemble, spoon guacamole into a large oval shape about 5-6 inches long; onto a large plate or cutting board. Beginning with 1 colour of Goldfish, create your first line in the center of your balloon. Repeat on each edge of the balloon shape using a new colour and leaving a space between to keep guacamole visible.
Use strips of bell pepper to create a basket and ropes connecting to the balloon. Use your last colour of Goldfish to make little people sitting in the basket of the hot air balloon.
Fix tomato pieces into little V shapes, and cauliflower florets into cloud surrounding the balloon. Finnish with carrot sticks arranged in a circle and top with a slice of orange.
Dip all the veggies and crackers into the guacamole and enjoy!
