Mix all ingredients for the kebab in a blender puree and mix into the meat, chill
Using your hands take about 2-3 oz. of meat or 4-5 oz. for a main course and wrap the meat around the bamboo skewer evenly ensuring 1 inch of the skewer is exposed
Preheat the grill and oil very lightly, also lightly oil the prepared kebabs and season with salt & pepper
Grill the kebabs about 3 minutes on each side just until they are cooked through
Using a brush, glaze the kebabs every time you turn them
When the kebabs are ready to come off the grill brush the glaze on generously
Serve kebabs along with the garnish and Enjoy !!
Add all the ingredients for the glaze in a pot and reduce by a third until the liquid reaches a glaze consistency
For the garnish, sweat the shallots in the vegetable oil over medium heat until their translucent then add the rest of the ingredients and warm through for 1 minute and set aside
