Halibut with Cilantro Fresh Fruit Salsa on a Bed of Seven Grain Wild Rice

Ingredients

For the Fresh Fruit Salsa

cantaloupe
honey dew melon
kiwi
red grapes
pineapple
strawberries (sliced)
cilantro
¼
cup white wine (semi-sweet)
¼
cup orange juice

For the Halibut

5
oz baked halibut
½
cup seven grain wild rice

Directions

Step 1

Bake Halibut in oven with lemon and white wine for approximately 10-12 minutes at 325F.

Step 2

Steam the wild rice for approximately 40-45 minutes.

Step 3

Mix fruit and cilantro together in pan, warm up and add the white wine vinegar and orange juice, then nap over the halibut and sauce.
