Hamburger Relish

g pickling cucumbers, roughly chopped

mL mustard seeds

mL turmeric

mL celery seeds

Thai chili, stem removed and roughly chopped

garlic clove, chopped

mL granulated sugar

g onion, peeled, cored and finely chopped

g red pepper, cored, deseeded and finely chopped

Caramelized Onions

¼
cup olive or vegetable oil
3
large spanish or yellow onions, skin removed and cut into thin strips

Step 1

In a large mixing bowl combine ground beef, red onions, parsley, chives, sambal, Worcestershire sauce, garlic, salt and pepper.

Step 2

Mix well until all ingredients are evenly distributed throughout meat.

Step 3

Make into individual patties and refrigerate until ready to use.

Step 4

Preheat grill to high heat.

Step 5

Lightly oil grill.

Step 6

Place patties on grill and cook until desired doneness.

Step 7

Place patty in hamburger bun.

Step 8

Garnish with caramelized onions, hamburger relish, tomato, lettuce, pickle and if desired, warmed short rib meat and pan seared foie gras.

Step 9

In a food processor, combine pickling cucumbers, mustard seeds, tumeric, celery seeds, chili, garlic, vinegar, sugar and salt. Process until finely chopped.

Step 10

In a large saucepan, add cucumber mixture with remaining ingredients.

Step 11

Cook over medium low heat for about 1 hour, stirring occasionally.

Step 12

Remove from heat and allow to cool.

Step 13

Refrigerate until ready to use.

Step 14

In a large fry pan on high heat add oil.

Step 15

Add thinly sliced onions and stir.

Step 16

Cook onions, stirring often with a wooden spoon, scraping the bottom of the fry pan to loosen any natural caramelization that is occurring.

Step 17

Continue to cook until onions are soft and dark golden brown. Remove from heat and set aside until ready to use.
