Health Fruit Bars

cup puffed rice

cup rolled oats

cup sunflower seeds, shelled

cup sesame seeds

cup mixed dried fruit, chopped (e.g., raisins, dried cranberries,
cup rice flour

cup peanut butter
½
cup maple syrup
¼
cup honey
½
cup carob chips
½
cup chocolate chips

Step 1

Preheat oven to 350°F (175°C).

Step 2

Line the base and up the lengthwise sides of an 8″x12″ baking tin with wax paper.

Step 3

In a large bowl, combine the puffed rice, rolled oats, sunflower and sesame seeds, dried fruit, and rice flour and mix well.

Step 4

In a small saucepan over medium heat, combine the peanut butter, maple syrup, and honey and heat gently for 2 minutes or until it becomes runny. Add the liquid mixture to the dry ingredients and mix until coated.

Step 5

Using a piece of wax paper to protect your fingers, press the mixture firmly into the prepared pan and spread it evenly. Bake for 15 minutes or until golden brown.

Step 6

Remove and let cool and crisp in tin before cutting it into bars. Store in an air-tight container. Makes 20 bars.
