Hearty Seafood Chowder

salmon filet (precooked and saved)

lb(s) frozen or fresh scallops

can crab or lobster meat (approximately 200g)

cup chicken broth

Tbsp butter

Tbsp olive oil

large potatoes, diced

large carrots, diced

large onion, diced
4
stalks celery, diced

tsp pepper

tsp Mrs. Dash Original Seasoning

tsp prepared garlic (in jar)

cup flour

cup chicken broth
1 ½
cup 1% milk
Multigrain bread (optional)

Salad

1
head green leaf lettuce
1
cup leftover veggies (tomatoes, peppers)

Tbsp tomato-oregano dressing

Step 1

Poach seafood by placing scallops and drained crab in a small stove-top pot with 2 cups of chicken broth.

Step 2

Cook at high heat.

Step 3

Once broth comes to a boil, reduce heat to medium and cook for 3 minutes.

Step 4

When timer rings, turn heat off and transfer seafood to a cutting board using slotted spoon.

Step 5

Reserve poaching liquid and let seafood cool.

Step 6

Melt butter with oil at medium-low heat in a large stove-top pot.

Step 7

Add potatoes, carrots, onion and celery to pot.

Step 8

Add spices and garlic.

Step 9

Sprinkle with flour and stir until well coated.

Step 10

Gradually add chicken broth, stirring constantly as you add. Add reserved poaching liquid. Bring to a boil then reduce to a low boil at medium heat.

Step 11

Set timer for 15 minutes (or until potatoes and carrots are done). When potatoes are tender, add milk.

Step 12

Chop seafood into bite size pieces and add to pot.

Step 13

Add salmon filet (bite size pieces)

Step 14

Heat throughout.

Step 15

Break lettuce into salad spinner and spin dry.

Step 16

Slice any leftover veggies or peppers.

Step 17

Toss with dressing.
