Herbed Potato Fries

lb(s) all-purpose potatoes, peeling optional, cut in ½" strips

- 2 tbsp olive oil

tsp dried oregano

tsp dried basil

tsp dried dill (or ½ tsp dried thyme)

tsp onion powder (optional)

Herbed Yam Fries
3-4
large yams (about 2 lbs), peeled, cut in ½" strips
1 ½
Tbsp olive oil

Tbsp dark soy sauce
2
tsp dried basil

tsp dried oregano
1
tsp dried coriander (or more basil or oregano)
½
tsp chili powder

Step 1
Preheat oven to 400°F In a large bowl, mix all ingredients.
Step 2
Transfer to a baking sheet lightly oiled or lined with parchment paper. Bake for 45-50 minutes, flipping after about 20 minutes, until tender and lightly browned. If also baking yam fries, rotate sheets halfway through baking. Season with additional salt and pepper if desired.
Step 3
Same directions as above.
