cloves garlic, crushed

cooking onion, sliced

tsp whole mustard seeds

dried chili pepper, crushed

allspice, berries
freshly cracked black pepper
Marinade
1
large clove garlic, finely, chopped
1
bottle honey brown lager
2
Tbsp brown sugar
1
tsp Worcestershire sauce
2
Tbsp soy sauce
¼
cup maple syrup

Tbsp ketchup
½
lime, juice of

Tbsp Dijon mustard
¼
cup apple juice
¼
tsp cayenne pepper
½
chopped chili
salt, to taste

Step 1
Preheat oven to 375°F (190°C).
Step 2
Place ribs in large pot and cover with cold water.
Step 3
Add remaining ingredients and bring to a boil. Skim, reduce heat to low and simmer covered for about 60 minutes or until tender.
Step 4
Drain and keep warm.
Step 5
Meanwhile, combine marinade ingredients.
Step 6
Place warm ribs, in a roasting pan and cover with 3/4 of marinade, saving the rest for basting.
Step 7
Bake ribs for about 20 minutes, turning to brown evenly.
Step 8
Place leftover sauce in small saucepan and bring to a boil.
Step 9
Simmer until reduced by 1/2 and pour over ribs if desired before serving.
Step 10
Combine the ingredients in a bowl.
