Hot Gingered Mango on Citrus Ice Cream

Citrus Ice Cream

cup vanilla ice cream (store bought)

Tbsp honey
1
Tbsp fresh grated ginger

tsp lemon zest

tsp orange zest

Mangoes

2 ½
cup fresh mango, sliced (about 2 large or 3 small)

Tbsp unsalted butter
¼
cup sugar

Tbsp lemon juice

Tbsp fresh grated ginger

tsp lemon zest
ground cinnamon and fresh mint for garnish

Step 1

For citrus ice cream, soften vanilla ice cream on the counter for about 10 to 15 minutes. Beat to smooth and add honey, ginger, lemon and orange zests. Return to freezer to firm up until ready to serve.

Step 2

For mangoes, purée ½-cup of sliced mango until smooth and set aside. In a sauté pan over medium heat stir butter and sugar together until melted and bubbling. Add remaining mango, lemon juice, ginger and lemon zest and stir until warm. Stir in puréed mango.

Step 3

To serve, scoop ice cream into serving bowls and top with warm mango. Garnish with a sprinkle of cinnamon and a sprig of fresh mint.

Step 4

Yield: 4 to 6 servings.
