Nothing says summer like a sunny day and a strawberry daiquiri in hand! Take a mini vacation with this recipe that uses real strawberries and an ice cream maker. This daiquiri is the perfect slushy drink that can be served with or without alcohol.
Takes 20 minutes in the ice cream maker.
In a large saucepan over medium-high heat, stir together strawberries, lime juice, sugar and water. Bring to a simmer. Once simmering, cook stirring for 8 minutes. Keep a close eye to make sure it doesn’t boil over.
Use a hand blender to pulse strawberry mixture until smooth, around 30 seconds. Place mixture in a measuring cup and cool completely in the refrigerator. Mixture can be made up to 2 days in advance and kept in the fridge in an air tight container.
Once cooled, pour mixture into ice cream maker and mix for 20 minutes or until a soft serve consistency has been reached. In the last 5 minutes, pour in 4 oz of light rum, vodka or gin (optional).
Pour or spoon into 4 glasses, garnish with lime slices.
