Sweet ice wine and bittersweet chocolate are a winning combination.

oz good quality bittersweet chocolate
½
cup boiling cream

Tbsp ice wine
chopped hazelnut, for garnish, (optional)

Step 1
Chop the chocolate very finely and transfer to a medium bowl. Meanwhile, boil cream and pour immediately over chopped chocolate. Stir until all chocolate has melted. Stir in ice wine and cool mixture.
Step 2
When filling has firmed slightly, pipe into chocolate cups with a plain tip. Sprinkle with chopped nuts, if desired.
Step 3
Alternately, chill filling until very firm, scoop into small balls with melon baller and transfer to a baking sheet. Freeze for 10 minutes and roll into cocoa powder.
