Vary up the frozen fruit for this recipe and the combinations are endless. This works great with frozen banana slices – perfect way to use up those bananas that are going brown, just freeze in single layers so the slices are individually frozen. You can also change up the yogurt and use flavoured yogurt if you like.
cup frozen peaches, diced, skin off
gram container of plain full fat yogurt (about ⅔ cup/150 ml)
Tbsp corn syrup (helps texture so stops crystallizing)
tsp vanilla extract, optional
handful of pecans, chopped and toasted, for garnish, optional
Let yogurt sit in freezer for 10 to 20 minutes – just so it is really cold – it will help keep the texture. Add frozen peaches and pulse until peaches breakdown slightly. Add yogurt, syrup and vanilla and continue to process. Pulse until incorporated and smooth. Scoop and serve or store in airtight container in freezer. Serve with toasted pecans if desired.
