cup unsalted butter

Tbsp fancy molasses

Tbsp golden corn syrup

Tbsp dark brown sugar, packed

cup whole wheat flour

cup all purpose flour

tsp ground ginger

tsp ground nutmeg

tsp ground allspice

large eggs

cup 2% milk, warmed

tsp baking soda

Tbsp ground almonds

cup lightly toasted walnut pieces
Spiced Honey Glaze
½
cup clover honey
2
cinnamon sticks

whole cloves

strips lemon peel

Directions
Step 1
Preheat oven to 350 degrees F and grease a 6-muffin jumbo muffin tin.
Step 2
Melt butter, molasses, corn syrup and sugar until fluid and remove from heat. Stir together flours, baking powder, spices and salt and blend into butter mixture. Stir in eggs. In a separate cup, stir milk, baking soda and ground almonds and add to batter. Stir in walnuts. Scrape batter into prepared tin and bake for 40 to 45 minutes, until a tester inserted in the canter of a muffin comes out clean. Glaze or serve with Spiced Honey Glaze.
Step 3
Slowly heat all ingredients over medium-low heat. Heat for 15 minutes, then strain and store. You can also leave spices in for a more intense flavour.
