lb(s) 2 lbs or 450 g ground lamb

tsp tsp onion powder (if you have the time it's nice with ½ cup grated onion)

Tbsp 1 tbsp parsley flakes

pinch Pinch of cinnamon

tsp 1 tsp baking powder

large 8 large baker potatoes
Water

cup 1% milk (May need more, add a little at a time until potatoes are smooth)

Tbsp 1 tbsp butter or margarine

tsp 2 tsp prepared garlic (in a jar)

tsp ½ tsp pepper

tsp 1 tsp parsley flakes
Mint jelly

tsp 1 tsp butter
1
pkg 1 package frozen edamame beans in the shell (1 lb or 450 g)
½
tsp tsp lemon pepper
2
tsp 2 tsp soy sauce

directions

Step 1

Place ground lamb in a large bowl and add the following ingredients: onion powder, salt, pepper, parsley and cinnamon. Stir, add baking powder, then mix again.

Step 2

Spray a large stove top pan with cooking spray and place on med heat.

Step 3

Form meatballs adding to pan as you form.

Step 4

Always add to pan from the outside in. Don’t overcook. Cool and set aside in fridge.
When you arrive home from work…

Step 5

Peel potatoes and cut in half. Wash and place in a large pot of water. Heat on high. (remember to make extra mashed potatoes)

Step 6

Once water is boiling add salt, stir and reduce heat to low.

Step 7

When a knife easily slides through a potato turn heat off and let stand while taking out the following ingredients; milk, butter, garlic, pepper and parsley.

Step 8

Drain water and add ingredients beginning with milk.I like to whip my mashed potatoes with electric beaters.

Step 9

Set aside half for Fright Night. Serve the rest.

Step 10

Place mint jelly in a small bowl to serve alongside meatballs.

Step 11

Melt butter in a non-stick fry pan at medium heat.

Step 12

Rinse edamame beans in a colander under cold water and shake off excess water.

Step 13

Add to pan of butter.

Step 14

Sprinkle with lemon pepper and drizzle with soy sauce.

Step 15

Toss until skins are completely coated and glazed.

Step 16

Put them in a big bowl with a side bowl for discarding shells. Fun!!!
