Lemon Cheesecake Mousse

A light, simple, citrusy summer dessert.

Ingredients

1 ½
cups whipping cream
12
oz cream cheese, at room temperature
cup sugar
½
cup fresh lemon juice
1
dash vanilla extract
Fresh blueberries, strawberries, raspberries or other fresh fruit for garnish

Directions

Step 1

Whip cream to soft peaks and chill. Beat cream cheese until smooth and beat in sugar, scraping down the sides of the bowl often. Beat in lemon juice. Fold in whipped cream in 2 additions. Dollop or pipe into serving dishes. Garnish with fresh blueberries and chill in the tart shells until ready to serve.
