ingredients

cup butter, at room temperature (125 ml)
¾
cup icing sugar (180 ml)
3
egg whites
zest of 3 lemons
1
tsp vanilla extract (5 ml)
1 ¼
cup pastry flour (310 ml)
½
cup of semolina (125 ml)
¾
tsp baking powder (3 ml)
pinch of salt

Tbsp icing sugar, for dusting (30 ml)

Step 1

Preheat Oven to 350 degrees.

Step 2

Cream butter in a medium bowl. Gradually add icing sugar, beating well at medium speed. Add egg whites, zest and vanilla and mix well. Combine flour, semolina, baking powder and salt and add to creamed mixture. Combine well.

Step 3

Drop dough onto baking sheet covered with parchment paper, leaving 2 inches between cookies. Flatten cookies with a fork and bake for about 10 to 12 minutes. Remove from cookie sheets and cool on wire racks.

Step 4

Dust with icing sugar.

Step 5

Yield: 3 dozen medium cookies
