Directions for: Lentil Dip


Lentil Dip

1 onion, sliced

3 clove garlic, minced

1 ½ cup green or brown lentils

1 Tbsp madras curry powder

1 lime, zested and juiced

¼ cup olive oil

¼ cup cilantro, chopped

salt, to taste

To Finish

radishes, sliced

pea shoots


seasonal vegetables


Lentil Dip

1. Bring a pot of water with a couple litres of water to a boil. Add lentils and simmer the lentils until tender. Drain and set aside.

2. In a separate pan, sauté the onions and garlic together until very soft and slightly browned. Add the curry powder and cook for another minute, then set aside.

3. Take a food processor, add all of the ingredients and blitz until you create a fine paste.

To Finish

1. Place the lentils in a deep bowl and arrange the other ingredients on top.
