This fruity recipe really is a delight, complete with raspberries, Limncello liqueur, coffee beans and chocolate.

Whisk the egg whites in a grease free bowl until it can hold soft peaks, then whisk in the sugar until the mixture is stiff and glossy.
Slice the cake into thick slices the same rectangular shape as the ice cream.
Place a cake slice on the plate then drizzle with Limoncello.
Layer ice cream on cake slice.
Place next cake slice on top of ice cream and drizzle a little more Limoncello.
Top cake slice with chocolate cappuccino ganache.
Spread the meringue over the cake and ice cream, you can brown the meringue with a torch or in the oven.
Garnish with raspberries and white chocolate cups filled with chocolate covered coffee beans.
