This fruity recipe really is a delight, complete with raspberries, Limncello liqueur, coffee beans and chocolate.

ingredients

lemon loaf or angel food loaf

block vanilla ice cream

small carton of egg whites

lemon
1
carton of raspberries

Tbsp sugar

bottle small bottle of Limoncello liqueur
1
lb(s) chocolate cappuccino ganache
3
Limoncello white chocolate cups
½
pkg chocolate covered coffee beans

Step 1

Whisk the egg whites in a grease free bowl until it can hold soft peaks, then whisk in the sugar until the mixture is stiff and glossy.

Step 2

Slice the cake into thick slices the same rectangular shape as the ice cream.

Step 3

Place a cake slice on the plate then drizzle with Limoncello.

Step 4

Layer ice cream on cake slice.

Step 5

Place next cake slice on top of ice cream and drizzle a little more Limoncello.

Step 6

Top cake slice with chocolate cappuccino ganache.

Step 7

Spread the meringue over the cake and ice cream, you can brown the meringue with a torch or in the oven.

Step 8

Garnish with raspberries and white chocolate cups filled with chocolate covered coffee beans.
