These little lime-flavoured almond cakes are delectably moist and slightly chewy. Serve them for dessert or snack on them like cookies! If you don’t happen to have a madeleine pan you can use a mini muffin pan.

Lime Cakes

egg whites

cup melted butter plus,

Tbsp melted butter
⅓
cup ground almonds
¾
cup icing sugar, sifted
¼
cup all-purpose flour
Grate zest of 1 lime

tsp lime juice
pinch salt

whole blanched almonds, toasted

Step 1
Preheat oven to 375 degrees F.
Step 2
Brush a madeleine pan with melted butter.
Step 3
In a medium bowl, whisk together the egg whites, butter, ground almonds, icing sugar, salt and flour.
Step 4
Add the lime zest and juice.
Step 5
Whisk until combined.
Step 6
Divide the mixture among 12 cups of the buttered madeleine pan (approximately 1 tbsp. each) and top each with a toasted almond.
Step 7
Bake the little cakes for 15 to 20 minutes until golden pale.
Step 8
Turn cakes out onto a wire rack and cool.
Step 9
Serve the cakes dusted with icing sugar
