Long Bean Stir Fry with Black Beans and Garlic

This recipe also works nicely with green beans instead of the longs beans. Fermented black beans are also known as salty black beans and Chinese black beans. They are just small black soy beans preserved in salt. They pack a great flavour so don’t add too much. Soak them in cold water for 10 minutes to reduce some of the salty edge.

lb(s) Asian long beans, trimmed, cut in half crosswise, blanched (454 grams)

Tbsp fermented black beans, soaked in water, roughly chopped

cloves garlic

Tbsp peanut oil or grape seed oil (10 ml)

Tbsp oyster sauce (30 ml)
½
cup tamari or soy sauce (60 ml)
¼
cup water (60 ml)

tsp sugar (5 ml)

Tbsp black sesame seeds, for garnish (30 ml)

Step 1

Add oil to a hot wok over high heat. Add Asian long beans and stir fry, for 2 to 3 minutes. Then add garlic and fermented black beans. Continue to stir fry for 1 minute. Add oyster sauce, pinch of sugar, tamari and water, cook for 2 minute. Sprinkle with black sesame seeds. Serve.
