ingredients

Lovin' Lentil Sloppy Joes

Tbsp vegetable oil

medium-sized onion, diced

stalks celery stalks, diced

medium medium carrot, diced

clove garlic, chopped

tsp oregano

tsp salt
½
cup ketchup
¼
cup water

Tbsp balsamic vinegar

Tbsp brown sugar

Tbsp dijon mustard

cup green or brown lentils, cooked and rinsed

cup mushrooms, chopped
4
white buns, sliced in half
4
tsp butter
4
slices medium cheddar cheese
ground pepper to taste
hot sauce, to taste

Coleslaw

1
heads savoy cabbage, trimmed and shredded
2
carrots, finely sliced
2
sticks celery, finely sliced
4
spring onions, finely sliced
¾
cup mayonnaise
4
Tbsp buttermilk

Tbsp maple syrup
2
Tbsp lemon juice, to taste
2
tsp apple or cider vinegar
½
cup walnuts, toasted and chopped
salt and pepper to taste

Step 1

Heat oil in a skillet, add diced onion, celery, mushrooms and carrot and cook through. Add garlic and spices.

Step 2

Stir in ketchup, water, vinegar, brown sugar and mustard. Add lentils and warm through.

Step 3

Butter the buns on all sides. Toast under the broiler until golden brown.

Step 4

Put the sloppy joe mix on the bottom half of each bun and top with a slice of cheese. Put the buns pack under the broiler until cheese is melted. Put the top of each bun on each sandwich.

Step 5

Serve with coleslaw.

Step 6

Whisk together the mayonnaise, buttermilk, maple syrup, vinegar, lemon juice.

Step 7

Add the dressing to the chopped vegetables and mix through.

Step 8

Season with salt and pepper and mix in the chopped nuts.
