Directions for: Lynn's Mac n' Cheese


2 Tbsp butter

2 small shallots, minced

1 tsp fresh thyme leaves

3 Tbsp all-purpose flour

1 cup heavy (35%) cream

2 cups whole (3.25%) milk

2 tsp Dijon mustard

250 g aged white Cheddar, grated

Salt and cracked black pepper

4 cups hot, cooked macaroni

Chives for garnish


1. In a large saucepan over medium heat, melt butter, add shallots and thyme and sauté until shallots are translucent, about 3 minutes, stirring often.

2. Stir in flour and cook 2 minutes more, stirring constantly.

3. Whisk in cream and milk and continue cooking until sauce is thick enough to coat the back of a spoon.

4. Stir in mustard and Cheddar until combined. Cook sauce for 5 minutes, stirring constantly until cheese is completely melted. Season to taste with salt and pepper.

5. Fold pasta into sauce until combined. Spoon into 4 warmed bowls, garnish with chives and serve immediately.
