A Lassi is yogurt based drink made in India. It’s very refreshing on a summer day or perfect as a morning smoothie. If you can find Ataulfo mangoes – use them – they are much less fibrous then a regular mango. If you use a regular mango and it’s stringy, puree and strain the pulp.

ripe mangoes, peeled and seeded, diced, preferably yellow Ataulfo mango (about 1 cup fruit)

ripe passion fruit, pulp removed and strained

Tbsp minced ginger, juice reserved (15 ml)

cup plain yogurt (250 ml)

cup 2 % milk (250 ml)
¼
cup honey, or to taste (60 ml)
Juice of ½ a lime

pinch of cardamom
cape gooseberry, for garnish, optional

Step 1

Scoop out the pulp from the passion fruit. Strain the pulp through a sieve into a small bowl. Discard the seeds. Squeeze out the juice from the ginger into the passion fruit. (Put the ginger on a spoon and place another spoon on top. Apply pressure on the ginger and squeeze out the juice) Discard the ginger pulp.

Step 2

Add chopped mango, passion fruit pulp, yogurt, milk, honey, lime juice and ice to a stand blender. Blend mixture on high until smooth and frothy.

Step 3

Serve lassi in tall chilled glasses with a pinch of cardamom on top. Garnish each glass with a cape gooseberry if desired. Makes about 5 cups.
