Marinated Sweet and Sour Sardi

large fresh sardines, cleaned and cut in half

cup all purpose flour (for dredging)

cup olive oil (for frying)

Marinade

cup olive oil

large red onion, thinly sliced
1
carrot, cut into very small cubes

bay leaves

Tbsp raisins
1
small chili, finely chopped

Tbsp rice vinegar
¾
cup dry white wine

Tbsp pine nuts, toasted

tsp granulated sugar

Step 1

Season the sardines with salt and freshly ground pepper. Dredge the sardines in flour and shallow fry them in olive oil until crisp on both sides (starting with skin side down). Arrange them in a single layer in a shallow dish.

Step 2

To make the marinade, heat 1/3 cup olive oil in a separate pan and fry the onion, carrot, bay leaves, raisins, and chili until the vegetables are soft. Add the vinegar, wine, pine nuts and sugar. Mix well and then pour the marinade over the warm fish. Allow to cool, and place in the refrigerator. Allow to marinate for a few hours before serving.
