slices side bacon, coarsely chopped

lb(s) (1 kg) baking potatoes, peeled, cut into ½-inch (12 mm) slices

large onion, chopped
⅓
cup (75 mL) diced green pepper
⅓
cup (75 mL) diced sweet red pepper
salt and pepper

g Black Diamond Monterey Jack Cheese, shredded

Step 1
In large frypan cook bacon until crisp; drain, reserving 1 Tbsp (15 mL) drippings.
Step 2
Cut potato slices into 1/2-inch (12 mm) cubes.
Step 3
Combine bacon, potatoes, onion, green and red pepper and reserved bacon drippings in 2-quart (2L) shallow rectangular casserole.
Step 4
Sprinkle with salt & pepper.
Step 5
Top with cheese.
Step 6
Cover with foil.
Step 7
Bake at 350°F (180°C) 1 hour or until potatoes are tender.
Step 8
Remove foil.
Step 9
Broil until browned and crisp.
