tomatoes (Preferably heritage and of different size and colors: red, yellow, orange, green zebra…)

cherry tomatoes

g baby or micro watercress
Flower petal (if possible)

Watercress Emulsion

g watercress, blanched

mL extra virgin olive oil

Balsamic Vinaigrette

Directions

Step 1

Between each slice place baby watercress and bit of the watercress emulsion
Form 10 piles of 4 to 5 slices of tomatoes (like mille-feuilles or napoleon)
finish each with a cherry tomato, drizzle around them balsamic vinaigrette
garnish with edible flowers.
