New Potato Salad with Lemon Dill Vinaigrette

Ingredients

lb(s) new or fingerling potatoes, halved
¾
cup extra virgin olive oil
1
lemon, zested and juiced
¼
cup chopped fresh dill
1
Tbsp grainy mustard
2
tsp caraway seeds, toasted
Salt and pepper

Directions

Step 1

Cook potatoes in a large pot of boiling salted water. Drain and set aside.

Step 2

In a small bowl, whisk together oil, lemon zest and about a ¼ cup lemon juice, dill, mustard, caraway seeds, and salt and pepper to taste. Toss potatoes with enough vinaigrette to coat. Adjust seasoning if necessary.
