Red rice has a pleasant, chewy texture. Grown throughout Asia, red rice is a member of the glutinous rice family. You can buy it at many health food stores and Asian grocery stores. Yield is 4 servings.

Tbsp butter

large shallots, chopped

garlic clove, minced

cup chicken stock
cup red rice
cup cranberries
cup raisins

Tbsp chopped fresh parsley
2
tsp chopped fresh thyme
½
tsp chopped fresh sage
cup pecans, toasted, coarsely chopped
Coarse salt and freshly cracked black pepper

small apples, cored, tops set aside

Tbsp melted butter

Step 1

Melt 2 tbsp. butter in heavy large pot over medium-high heat.

Step 2

Add shallots and garlic and saute until tender, about 4 minutes.

Step 3

Add chicken stock.

Step 4

Bring to boil.

Step 5

Add red rice.

Step 6

Reduce heat to medium-low.

Step 7

Cover and simmer 45 minutes.

Step 8

Stir cranberries, raisins, parsley, thyme and sage into rice.

Step 9

Cover and cook until liquid is absorbed, about 5 minutes longer.

Step 10

Mix in pecans.

Step 11

Season generously with salt and pepper.

Step 12

Preheat oven to 350 degrees F.

Step 13

Put the apples in a baking dish and stuff evenly with the rice and cranberry mixture.

Step 14

Put the tops back on and brush the apples with melted butter.

Step 15

Bake for about 35 to 45 minutes, or until apples are fork tender and stuffing is heated through.
