Hearty, plump pancakes full of oaty goodness.

If you don't have buttermilk you can substitute using regular milk and add 2 Tbsp. of vinegar to the milk. For my family of five, I double the recipe which makes approximately 16 pancakes.
Stir together flour, oat bran, baking powder, brown sugar and salt. Make sure to press out any sugar lumps against side of bowl.
In separate bowl beat egg, add buttermilk, vegetable oil, vanilla and quick oats. Stir well. And let stand for 5 minutes.
Make a well in center of dry ingredients and slowly pour in the milk mixture.
Stir well and set aside for 5 minutes.
Heat pancake grill to medium high.
Drop 1/4 cupfuls of batter onto hot oiled grill. Batter will be thick.
Turn pancakes over once they bubble on surface and edges look cooked.
Lightly brown the other side and serve with toppings of your choice.
