ingredients

Base for Golden Raisin Oat Bar

cup unsalted butter, melted

cup sugar

Tbsp light brown sugar, packed

cup all purpose flour

cup regular rolled oats (not quick cook)
½
tsp cinnamon
dash salt

Topping for Golden Raisin Oat

large eggs

cup light brown sugar, packed
cup all purpose flour
½
tsp baking powder
½
tsp cinnamon
1 ⅓
cup golden raisins
1
cup unsweetened coconut

Assembly

cup cranberries
cup sugar
2
cup diced pears
leftover golden raisin oat bars, crumbled

Step 1

Preheat oven to 350 degrees F. and line a 9-inch square pan with parchment so that it hangs over the sides.

Step 2

For base, stir melted butter and sugars together. Add flour, oats, cinnamon and salt and bland. Press mixture into prepared pan and bake for 15 minutes, until browned. Allow to cool.

Step 3

For topping, beat eggs and sugar with electric beaters until fluffy. Fold in flour, baking powder and cinnamon, then stir in raisins and coconut. Spread over cooled base and bake for 20 to 25 minutes, until golden brown. Cool before cutting into bars. Use as a topping for cobblers.

Step 4

Preheat oven to 375 degrees F.

Step 5

Toss cranberries, pears and 2/3 cup sugar.

Step 6

Spoon fruit mixture to ramekins or individual baking dishes (makes 4 to 6 depending on size of dish). Crumble leftover Golden Raisin Oat Bars on top of fruit. Place ramekins on a baking sheet and bake 25 to 30 minutes, until fruit juices are bubbling. Serve warm.
