Ingredients

Tbsp unsalted butter
1
yellow onion, sliced

clove garlic, minced
50
oz canned tomatoes with juices
2
cup chicken stock
¼
cup 35% cream
salt and pepper, to taste
1
cup Arborio rice, cooked

Directions

Step 1

Melt butter over medium heat in pot. Add onions and garlic, cook for five minutes until onions soften.

Step 2

Add tomatoes and stock. Bring to boil and reduce heat. Simmer for 40 minutes stirring periodically.

Step 3

Remove from heat and purée until very smooth with either an immersion blender or regular blender.

Step 4

Add cream, rice and adjust seasonings with salt and pepper.
