Tbsp lard or butter (60 grams)

slices large slice raw ham

Tbsp olive oil (30 milliliters)

ripe tomatoes

Tbsp grated Parmesan cheese

Step 1
Preparation time is 20 minutes.
Step 2
Place the lard (or butter) in a large frying pan and melt. Slice the onions finely and the raw ham. Place in the pan and simmer to soften.
Step 3
Break the eggs into a bowl and beat roughly with a fork, season with salt and pepper to taste and add the grated cheese. Peel the tomatoes and fry them gently in olive oil for ten minutes.
Step 4
When the onions are soft and turning brown mix the tomatoes into the eggs and pour the eggs onto the onions.
Step 5
After a few minutes turn the omelette with the help of a large plate then cook on the other side.
Step 6
Can be served either hot or cold.
