cup (125 mL) granulated white sugar

cup (60 mL) salted butter at room temperature

cup (125 mL) all-purpose white flour

tsp (60 mL) baking powder
zest of 1 orange

cup (250 mL) 35% cream

Tbsp (15 mL) granulated white sugar

cup (60 mL) 2% Oikos Key Lime Green Yogurt

Step 1

In a large bowl, use an electric mixer to beat the eggs and sugar on low speed for 2 minutes.

Step 2

Add the butter and beat until smooth, about 1 minute.

Step 3

Sift the baking powder and flour together. Add this to the egg mixture along with the orange zest. Beat on low speed for 1 minute.

Step 4

Let sit at room temperature for 30 minutes.

Step 5

If you have a krumkake press, lightly butter it. Spoon 1 tablespoon (15 ml) of batter into the heated press. Close the press and let cook for about 60 seconds or until the waffle is golden. Remove from press and roll the waffle into a cone. Allow it to cool completely.

Step 6

If you do not have a krumkake press, use a small non-stick pan with a diameter of 10 to 15 centimetres (4 to 6 inches).

Step 7

Melt a ½ teaspoon (2 ml) of butter in the pan over medium-low heat.

Step 8

Spoon 1 tablespoon of batter into the centre of the pan. Use the back of a soup spoon to spread the batter to the edges of the pan.

Step 9

Let cook for about 5 minutes or until the edges have browned.

Step 10

Use a spatula to flip the waffle. Be patient: the waffle will be sticky. Let cook for another 2 minutes.

Step 11

Remove the waffle from the pan and immediately roll it into a cone. So it keeps its shape, hold it in your fingers as it cools part way (about 10 to 15 seconds). Set it on a plate to finish cooling. Keep at room temperature.

Step 12

Repeat Steps 7 to 11 using the remaining batter.

Using an electric mixer, whisk the cream and sugar on medium speed until the cream holds to the whisks and peaks form.

Use a rubber spatula to gently incorporate the whipped cream into the lime Greek yogurt. Chill until ready to serve.
