Whip the cream, adding the juice and zest of the lemon, chives, and the salt. Put aside.
Shuck the oysters, and remove oysters from shell.
Spoon the whipped cream mixture onto the shell, place the oyster on top. Add some shredded sea lettuce and a thin slice of jellyfish to garnish.
Cook the jellyfish in boiling water for 10 minutes. Strain and remove jellyfish tentacles. Let the jellyfish rest for 10 minutes then slice.
